Parsley is not just a table garnish, but a very nutritious herb that has many healing properties.


Here are some health benefits of Parsley:

Parsley contains Vitamin K, Vitamin C, Vitamin A, Folate, Iron, Copper, Potassium,Magnesium, Fiber, Calcium, Manganese, Phosphorus, Zinc, Vitamin B3 and B1.

Parsley's volatile oils have been shown to inhibit tumor formation and neutralize types of carcinogens.

Parsley is filled with Anti-oxidants and is an excellent source of vitamin C as well as vitamin A.

Vitamin C is a powerful anti-inflammatory agent, and is needed for the healthy function of the immune system. Vitamin A is very important to a strong immune system, it is known as "anti-infective vitamin."

Parsley is a good source of folic acid, one of the most important B vitamins.

Parsley is good for bowel movements, if you have constipation and you eat a bowl of chopped parsley salad, your digestive tract will be more active and you will not be constipated anymore.

I love eating parsley, I make tabbouleh salad and enjoy it that way. Its a delicious Mediterranean salad that is so good for your health.
All you need is 1/2 cup cracked wheat (soak it in warm water and drained) chopped parsley, chopped tomato, chopped green onion, chopped bell pepper, chopped mint, 1/2 cup olive oil, some lemon juice, some salt and black pepper for flavoring.

Add all that in a bowl, mix it well and serve over fresh lettuce leaves.
